1. Excited - I just bought this book for my iPad. I'm so excited to try some of these recipes that I know I never would have otherwise. I'm not an adventurous cook but after reviewing the recipes in this book, I think I can do it! I was an average middle class mom chef, had decent food on the table every night, mostly with some nutritional value but not always mouth watering!! Now that my husband is retired and we are tired of the same old dinners, I can't wait to try these recipes without feeling like a failure. They seem simple but what I'm sure my husband and friends will think is gourmet compared to my usual fare. I tend not to try recipes that have a long list of ingredients and a longer list of steps! I love that I can click on an ingredient (on my ipad) and see a picture of the item,which will be wonderful in the grocery store. For the most part the ingredients are common and if not, it's something I wish I had known about. I love all the tips and the pictures! Thank you Ina for letting me experience cooking and enjoying it, in the last stage of my life!!

1. How-to cook book, not recipe book - I think the review that says "just tell me how much frigging salt to use" completely missed the point of this book. Although there are recipes, the book is totally about how these four elements work--separately and together--to make your cooking much better. As you read and learn, you'll know how much salt to use--which kind, when to use it, how much--and how to get desired results based on your tastes, your kitchen, your meat supplier, etc. If you just want to follow recipes, but a different book.

2. Mostly Useless - I bought this mainly for guidance with salt. The author provides some vaguely useful information along these lines, most notably a chart illustrating salt ratios per pound/quart with different varieties of salt. From there, the recipes are mostly useless, not telling the reader exactly how much salt to use. Don’t tell me to salt to taste or salt generously - TELL ME EXACTLY HOW MUCH FRICKIN’ SALT TO USE. And I don’t see how this is relative or situational. I have NEVER been to a restaurant that asked me “How much salt would you like for us to put in your entree,” which leads me to believe that if a professional chef already has a given recipe in mind, they probably already know exactly how much salt they’re going to use to satisfy a typical restaurant customer. TELL ME THAT EXACT AMOUNT. Teach by example!

If you’re a fan of Harold McGee and/or J. Kenji Lopze-Alt, you’ll enjoy Samin’s book. It might even be difficult to not rush off to the kitchen and explore what you’ve just learned. Wendy MacNaughton’s illustrations add a touch of humor, but also a visual reference (for example, her ‘pesto pie chart’ showing the ingredients of a pesto sauce, from which you can then vary ingredients and flavors).

4. Good, but some issues with the science - I haven't completely read through the book yet. I like so far the main points of each passage, but, as a scientist, the blatantly incorrect details of the science behind the cooking kind of ruins this book for me. Denaturing a protein doesn't cause proteins to more tightly coil and squeeze out water, it loses all secondary structure and clumps together, leading to shrinkage and water loss. Osmosis isn't the movement of water from less concentrated to more concentrated, it's the opposite. These details kind of ruin Nosrat's authority on the subject for me. I was excited for something akin the "The Food Lab," but it's obvious Nosrat knows very very little of the details actual food science.

I’ve always thought fermenting fruits and vegetables would be difficult, but the book makes this process seem far easier than I’d believed. 2. Information packed and easy to read! - I was astonished at how fermentation played such a key role down through the centuries in many different cultures! I had no idea that the way that mankind preserved foods to make it from season, to season, was the main key in making probiotic foods! Straight forward is the key that drakes press took upon the path of writing this text. 4. Good to Know! - This book is both easy to read and very, very informative. I really felt like I learned a lot. There was all kinds of information, even do it yourself instructions. Anyone can do this at home and they gave you every bit of info that you'd need. 6. Great Intro To Fermentation - Probiotics, the science behind fermentation, has recently become a buzzword in culinary circles. This instructive book by Drake Press helps demystify fermentation by breaking down the assorted food and beverage categories that are products of this ancient culinary practice. 7. Big Help! - So excited to have a basic guide to fermentation! I have read many articles on the health benefits of home made probiotics and have been thinking about doing this for a while. I am anxious to try the detailed recipes that include time frames, temperatures, and indicators. Fresh seasonal foods are recommended, but I am happy to have the manual on hand for spring farmer’s market fare. 11. You don't have to be a Helath Nut to Love this book! - We all know that in today’s society health is our number one priority when it comes to food. I personally need to make sure that the foods that I choose to in-take gives my body nourishment, help control weight gain, as well as fancy my taste buds. “Fermentation for Beginners” is an excellent read, giving great ideas for fermenting some of our favorite foods giving us a better idea of how to restore the healthy bacteria in our bodies that we lose by indulging in fatty foods. I absolutely love the recipes in this book, I myself am a wine and bread lover so various tips and ideas on fermenting my favorites were definitely a bonus for me! One of my favorite recipes in this book is the “Garlic Dill Pickles”, they were delicious and had a lot of flavor! You don’t have to be a health nut to purchase this book, just learning about how to eat a little bit better and the pros of fermenting foods that we eat on an everyday basis is a great step in the right direction. I do however like the fact that it has a specific target(diabetes) but also offers recipes which can be beneficial for persons with alternative complications. Nonetheless, the recipes are pretty vast and there's a lot to chose from. I also enjoyed the fact that most of the recipes didn't call for more than - ingredients and that the meals were ready within min. My favorite recipes included the spicy chicken tortilla soup and the mini chocolate cheese cakes! Sometimes I feel stuck in a rut with my cooking but this book helped me branch out- even my 'meat and potatoes' fiancé liked the lighter Cobb salad recipe. This cookbook will be in my kitchen for a while!

26. Not bad - It seems like a difficult diet to follow since it requires avoiding red meat and reducing sweets by a lot. But it does seem to have been developed to reduce common health problems. On the whole most of the recipes weren't really good or bad, although some of them did contain good tips for making ordinary foods fit in with the diet. 28. Who ever said I have to eat bland food on a DASH diet? - Well this book proves otherwise. My personal favorite is the spicy popcorn. The banana-peanut butter smoothie is a close second. Aside from the wonderful recipes, the book gives helpful tidbits on maintaining a diet low in sodium for people with hypertension and a history of high blood pressure. I’m so glad I listened to my friend who recommended I try this book to me when I wouldn’t stop complaining about how terrible healthy diets taste. Even though I was skeptical at first, they made it so easy to make quick, healthy and delicious meals that for the first time in my life I can actually stick with a diet. Pecan crusted Honey-Dijon Salmon, Date Sweetened Chocolate Oatmeal, Chocolate glazed coconut bars, and so many more recipes are staples in my house now. I highly recommend this book to anybody looking to try the DASH diet.

It is an eating plan that is low in sodium.” Plain and simple, yet yum and delicious, this book is a treasure of easy to make and quick to prepare tasty and scrumptious looking dishes. I liked the section on what to eat on a typical ,-calorie-per-day DASH daily meal plan, and I like the breakdown of how much. 44. "Cheers" to lower blood pressure! - This book does a great job of helping you take many of the things you frequently eat and reducing the sodium content. I really like how easy the recipes are and that I don't have to buy a ton of ingredients that I will only use for one meal before they spoil or expire. I have tried the 'White Bean and Greens with Sausage Soup' and it was a hit with my entire family. These meals really do a good job of keeping the flavor while eliminating the extra sodium.

Good selection of breakfast and dinner recipes - If you want an expansive or extensive account of the DASH diet, hypertension or detailed nutritional information, this probably isn’t the book you need. In fact ‘The Dash Diet’ Cookbook even says in its opening chapters that you want to complement this book with additional resources. What this cookbook does offer the reader is a solid definition of the Dash Diet and how to plan menus, shop smart, and cook good nutritious food. It’s difficult to find a cookbook that can appeal to everyone, but the selections are pretty good, especially for breakfast and dinner.

1. Not Ready for the iPAD or OS - This cookbook has not been optimized for the either the iPad or OS. The interface is very slow, the page displays do not utilize the full portrait or landscape space available, page turning is an exercise in patience with significant delays in response time and image display, there is no search content feature, and the index is not properly organized or linked with specific recipes in the cookbook. I cannot recommend this book until the publisher and distributor correct these problems.
